Woohoo! I downloaded and installed Ghostscript and hpijs-foomatic from http://www.linuxprinting.org/macosx/hpijs/ and she's rockin and rollin.
Yeah, that's the way to do it :-)
Apple pioneered PostScript, so by default that's what a Mac knows. Cups combines with ghostscript and foomatic nicely to talk HP-printing ;-)
