at what stage in the mail chain are you suggesting this be done? generally mail leaves gmail.com and goes direct to the addressee, ie in this case canterbury.ac.nz
i doubt that canterbury.ac.nz has procmail in its mailserver chain. each ultimate recipient however could doctor the mail they recive with prcmail, but this is a per end user setting, not a universal solution.
