Characteristic impedance is only important where the length of wire is significant wrt to the wavelength of the signal. In the case of audio, that is kilometers long, so no, do not use a balun for audio, just use 2 pairs to send your audio signal.


As for the baluns, i suspect you are using the wrong core material. Each material has a specific permittivity over certain frequency range.
Choose the wrong one and you may as well be winding it on a peice of cardboard. South Island components have a decent range of torroidal cores.
