Have you looked at www.backports.org? Contains a lot of new/upgraded software conveniently wrapped in bite-size portions and specially packaged for Debian 3.0. They seem to have spamassassin 3.0.1 if that helps. I have tried a number of packages from this site, and have had no trouble. I have not tried spamassassin.
