I have experience with some of these Rik - though not the latest Knoppix as I have settled on Mepis - in my opinion an improvement on the excellent Knoppix distro. Basically install to hard drive is reasonably painless - I do it heaps ;)
Morphix and Mepis are very easy to install to hard disk, there is a gui button and gui installer for both these. Both allow you to setup a home directory as well. Knoppix is a little trickier - install is launched from a console screen (is that what you call it when you ctl+alt+F1?) - by typing one of 2 available commands, depending on which install script you choose to use. Mind you - it is very handy to be able to do this in text mode by starting with the # knoppix 2 (text mode) option on a low spec machine. There is no opportunity to set up a home directory during the install (on the versions I have used anyway). I have always found it best to copy the knoppix folder to the hadrive (or linux folder in the case of Mepis) - and boot with the CD but eject it so that the startup detects the copied cloop file - avoids cloop / read errors that I always seem to get otherwise, and saves your CD drive from excessive wear and tear.
