Hmm I did some googling for this same problem a while ago. Just google "emacs word wrap" and you'll find the stuff I found. I never bookmarked it though sorry. From what I remember emacs doesn't have a soft-wrap option. It can insert hard line breaks for you though. I use alt-q and emacs wraps the paragraph for me. I don't mind the hard breaks in latex files etc... You can turn it on so that it automagically does the breaks when your line gets however long. I believe the option is called "auto fill".
