Inbound mail?  You shouldn't lose outbound mail.  Do you
have a secondary (backup) MX?

Cacti (http://www.cacti.net/)

It is pretty easy to setup, and maintain.  Biggest issues
would be the processor overhead when viewing graphs, and the
web & SQL server requirement.

Plus, set up snmp on any hosts/routers you want to monitor
and you can monitor them from the one install.  You can also
use scripts to get data and graph it as well (e.g. mail
queue lengths).


Otherwise look up sa (sysstat package on Fedora -
http://perso.wanadoo.fr/sebastien.godard/) which will record
values for the local machine, but you would have to figure
out how to graph the data yourself.
