This is really a function of your local delivery agent, rather than your mail 
reader. Many support the use of a .forward file in your home directory, or the 
use of an aliases or virtualusertable ( sorry for the sendmailspeak there ) . 
These can be configured to do things like this.

If you run your own mail server then this is pretty simple. Otherwise you'll 
need to find out what your isp offers.

I can't comment on the evolution bit, as it crashes on me every time I try and 
point it at my imap server ):
