What size folders are we talking?
My home web/mail server is a EPIA 600Mhz with 256M RAM and 7200RPM discs which
primarily runs Apache/Postfix/Dovecot.
I have a few IMAP folders (~40) most of them with between 200 and 2000
messages. Opening the larger folders takes initially around 3 seconds with
roundcube and then around 1 second after that. If I watch top on the server
while opening them apache (mod-php5) hits around 20% CPU and imap (dovecot)
only hits between 5-10%.
