I have made a cd that does that - it was a hacked gentoo boot cd that started sshd and distcc to use the booted boxon a compile farm. But it took a while to sort out how to do it, and i wouldn't recommend it over finding a monitor in terms of time... I think most live cds are not going to start sshd with a known root password for security reasons. I don't think i have a copy of mine any more. good luck in the search.
