That is a common misconception. 

If you reply to an existing message, but change the subject line your
message will still have in its headers something like:

In-reply-to: <[EMAIL PROTECTED]>

This header asociates your message with an earlier message and most
email clients that do threading will use this header, rather than the
subject line, to work out what messages go together to make a thread.

Short answer: new thread, new message, not a "reply and change the
subject matter"
