While it may not be particularly helpful to say it, but literally _any_ unix will do what you want. All ( ? ) distributions have an 'expert mode' which allows you to pick and choose what you install. Just load what you need, and no more. Servers do not need all that X-11 Windowing System baggage. You can administer Samba over the local network using the 'swat' tool.
Be sure to check that your network cards are properly supported. Linux is probably better than *BSD as far as that's concerned, but people claim that the *BSDs are the 'real thing', and thus are more reliable for continuous use. -- CS
