Working at last! There's just been a conversation on the slax forum about device=. Apparently it won't work on the device that you boot slax from (i.e. the usb drive in my case).
So I went back to using slaxconfsave and slaxconfrestore. I've altered the slaxconfig script to delete the old save file before saving a new fresh one. Hopefully that will sort the 'incremental' problems. It is has saved all my My rc.inet1 script is now changed to keep trying to connect to my wireless network if it fails the first time. I had to stop slax running xconf before startx to get the screen to work at anything above 640x480. It's now doing 1024x768 without any problem. i might try and put some of this up on the wiki now.
