I agree that two installfests is a bad idea if it splits and
dilutes the knowledge/resources required. 

But... here are a few random reasons for a second one:

It might be OK if we're targetting different geographical
populations and possibly different demographics. For
instance the uni-based one could be aimed at [technical]
students:
* Engineers (specifically, the software & computer
engineering department),
* Mathematicians,
* Computer science students,
* KAOS (though these people, in general, (sorry
HappyEvilSlosh) scare me),
* ALL postgraduate students

We can evangelise:
* LaTeX (postgraduate work)
* Open office for other stuff (Maybe a PC running Windows
with Office 2003 [viewers] would be handy to show that Open
Office presentations/documents work with it)
* Octave for engineering work
* Show how Matlab works on it too (physics, maths,
engineering)
* Entertainment apps like Amarok, Kaffeine etc (showing
Amarok syncing with an iPod would be good)

Beryl: A high spec PC running some Beryl eye candy would be
beneficial. In this superficial world people like to see the
wow factor. Couple that with the lack of bluescreens.

Skills: The place where I work uses Linux a lot: maybe it'd
entice a few students over if they know/think it'll enhance
their job opportunities.

A problem with this is that it's late in the academic year
(beginning of the 4th term). A lot of students may not care.
(And it's during ski season!)
