Replying to myself. :-). The problem with this was something to do with using the live-boot install. Changing to using Freenas booting of a flash disk fixed it, on the same test machine. Odd, but there you go.
Now going to try it out with 3 1Gb/s NIC's, crossover cables and three clients vmware clients.
