I use GNU Anubis as an SMTP proxy to do just this sort of thing.

This does not involve changing the MTA config, which can cause you
huge problems, especially if you don't know what it even is. Ideally
we'd have email client applications which can keep track of our
identities and choose the right one; but I haven't seen any that work
reliably.
