The biggest bugbear with ubuntu desktop is that it doesn't set up the
network on any of my machines until someone logs in. I am not sure
whether that is just because the connections are WPA protected
wireless where the authentication stuff is per user, or whether a
wired connection would be the same.

But anyway, issues like this would make me want to do a server install
for a server, rather than a desktop whivch you then strip down.

I am not sure of the exact packages you get in server but this page
