Thanks to everyone who emailed advise and suggestions! The VNC was too slow (great to help people remotely but not fast enough to project a movie to a class). Running X remotely, although VERY interesting and having many possibilities (as well as being fun!), it was just too weird for a classroom (my opinion! the kids would probably just get on with it without question - guess I'm just old). The USB to VGA adapter... well, the model of the classmate I had was bought last year and the next model is out... guess what, it has a VGA socket.
