As long as you're not ripping off a copyright image, and claiming its your own or making money from it, then noone really cares. However there are Unit Standards with performance criteria which must be met.
I recall that the web design ones say things like "Consent must be gained to use any copyrighted media." (or words to that effect) And if your work fails on any performance criteria then you don't get that unit standard.
Interesting fact: statutes, court judgments, laws etc cannot be copyrighted.
