It seems do depend on the distro and device

With most devices you have to pair it when you plug it in,

which I did with my bluetooth phone and was failry straightforward on Ubuntu

My Holux GPS was a bit more challenging and I had to follow a fix from the
Crunchbang forums
which involved modifying the /etc/bluetooth/rfcomm.conf file
