I'm thinking to go the same way; I already have RH 7.3, but until now
I haven't been paying much attention to XFS. How do you get that
installed? Is there a step-by-step?

Grab the installer iso image from SGI at: ftp://oss.sgi.com/projects/xfs/Release-1.1/installer/installer/i386/RH7.3-SGI-XFS-1.1.iso
burn it to a cd, boot from it and do an XFS enabled install. (just like a regular install, but you have a running XFS kernel and filesystem support) You'll need the RH 7.3 cd's of course.
Also make sure that you read the README:
ftp://oss.sgi.com/projects/xfs/Release-1.1/installer/README

before you burn anything to CD.
