..the shell option you want is "dotglob", or, rather, to disable
dotglob. From the bash manual page:

              dotglob If set, bash includes  filenames  beginning
                      with  a  `.'  in  the  results  of pathname
                      expansion.
So, "shopt -u dotglob" should disable "." expansion in pathname
expansions.
