Well,

I have a couple customers who are doing that already.  File and Printer
sharing with Windoze boxes is simple with Samba.  Try Samba.org, there
is also a very handy book on Samba by O'Reilly.  A bit of work
initially, meaning a bit of file editing and testing, but its pretty
much set and forget.  

Also, depending on usage, you don't really need a big powerful box with
Samba.  I have 20 users on a 300 with 500M ram.  Works just fine and it
was an older existing box they were going to mothball.  SO basicall it
cost them about $200US.  They are one of those non-profit legal
assistance organizations...  I spend the vast majority of the time
fixing the Winbloze boxes and hardly ever get to play with the Linux
server...
