That's a toughy and requires some opinion. Currently, I prefer either UW IMAP or Courier, since they use standard Maildir mail files which allow you to un-f$#@ things if something gets dorked up. UW is my favorite for small implementations at the moment because it is simple yet powerful.
Cyrus IMAP is supposed to be great for large implementations. It is supposed to be optimized and fast, it integrates with LDAP and keeps messages more secure in it's own mail-store. Unfortunately I have not found a good way to make the Cyrus Mail-store as easy to manage as the other two. There are a lot of configurable options, but it's quite complex. The mailfiles are not easily maintained, and if you wish to back up someone's mail file individually, good luck. Mail is delivered using the Cyrus tool "deliver" which can be called from procmail or Postfix (or Sendmail). However, SuSE has chosen to couple Cyrus IMAP and Postfix for their SuSE Linux Openexchange Server (SLOX). It has been a real learning experience for me. As you can see, I'm not quite sure what to think of Cyrus yet... Perhaps with some time to play I could grow to like Cyrus-IMAP. It tastes a lot like GroupWise, which I enjoyed administering.
