Recording is a different subject.
This is highly dependent on you system resources, CPU, memory, disk I/O.
If you are using a high compression codec with a high bitrate, then you need
a fast CPU or you will lose frames, if you are using low compression, then
you need fast disk I/O.
Usually, in the case of guvcview at least, a good test is to disable audio
and setting the stream format and the video codec to MJPG.
This doesn't require any software compression, so if you still experience a
high frame drop then most likely the problem is with disk I/O speed.
Any other codec lfv, wmv, mpeg, mp2, mp4, can stress the CPU quite a lot, so
try tweaking the codec options and the resolution (by lowering the bit rate
and resolution you also reduce cpu requirements on the expense of video
quality)

On a side note I also own a sphere AF and can save a mp4 video with mp2
audio on guvcview at 640x...@25fps with the standard codec options. ( Mobo
GA-X48-DQ6 with Q9300 o...@2,8 Ghz  + 4Gb r...@900mhz + GF8800GT)
