I have been using VLC (VideoLAN Player) to record video, both from various 
(3-4 different models) webcams - both UVC-compatible, and not - and from 
MiniDV camera through firewire.

VLC has some neat options so that you can use it without GUI, pure CLI.

Heck, I had even set-up impromptu encoding and streaming server with 
VLC! :)
