Well we know plenty about the hardware right now; just take a look at 
the Hardware section on the wiki 
(http://nxtpp.clustur.com/index.php/Linux4nano_Wiki). The problem is 
that we still need to figure out how to run custom code, by either 
bypassing the encryption system or encrypting the code we want to run. 
Like you mentioned, DFU mode should definitely be checked out 
(http://nxtpp.clustur.com/index.php/Modes). I would recommend tinkering 
with dfu-util, trying to properly read and wright firmware in DFU mode. 
Since you have experience with ARM, an interesting exploit to check out 
would be the ARM7 Go command 
(http://theiphonewiki.com/wiki/index.php?title=ARM7_Go) This is probably 
only applicable on the 4G Nano since the 2G iPod Touch and 4G Nano have 
the same processors, and therefore the same commands.
