It's normal for those to look different, as mine was built using other
tools. It should behave the same nevertheless.

The loader is a minimal version of the core that just allows to
up/download things and execute them (to be able to load a core). The
core handles the more advanced features. Having a working loader would
be sufficient for now.

You can always reboot your iPod and enter disk mode.

Which generation and firmware version of the classic do you have?
The notes exploit will only work on the first generation (80GB or thick
160GB) with firmware version 1.0.3. For other models/versions, you'll
need to use the fucc DFU exploit, which will be even more likely to fail
with the current code.
