For both, you have to pick a distribution to install. Common choices are Fedora, Mandrake and SuSE. They will each have their own installation docs. Somebody already pointed out www.distrowatch.org for information about each distro. Also, check out www.tldp.org for more general information. Look for the installation-related HOWTOs.
