Why are you sure that dar wouldn't work?  It makes full and incremental
backups.  The only difference is that the increment is based on the last
full backup.  IMO, that's a good thing, since it means that you only
need to keep one incremental backup for all files, instead of trying to
find a file that may have been last changed on Tuesday or Wednesday.
