If you do decide to go with ubuntu, I would just mention that you may want to try both the latest version (11.04) as well as the current long-term-support version (10.04) as they are fairly different. Of course, if you are willing to learn, you can pretty much make any distribution of linux look like another. If you are just looking for install and start using right now, I would suggest burning some distributions to CD and booting the burned CD from the bios. Most distributions can be used that way to evaluate the interface. Of course every thing will be a bit slower, but it can give you an idea of the differences between distributions. The only thing you want to avoid / be aware of is distributions like knoppix that are made only to run from the CD. One thing you didn't mention was what sort of hardware you have.
