LEM with X is the basis for our embedded system. I say basis because I upgrade 
busybox, 
upgrade X to 4.0.x, add support for PCMCIA, and add a 2.4.x kernel.  

I even think of using it as a developement system though.  A minimal Debian system 
would be 
much easier to get going.
