all the boot/linuxconf messages are stored in the logs.
you can see them after boot.

you can disable the askrunlevel module in the
/etc/rc.d/rc.sysinit

just coment the line:
/sbin/askrunlevel

you can try the usermenu (or the treemenu?) module
to setup "user defined menus"
