First of all, it is not linux ver 5.0 and 6.1, but Red Hat's distribution
version 5.0 and 6.1.
Linux is still in kernel version 2.2.13 only.

I have not seen any information that says RH 6.1 is unstable. Besides,
that is an entire distribution, and therefore would not even be released
if it were unstable.
What could be the situation is this:
Linux kernel is released in two types:
Stable releases - these have an even number as the minor version:
eg 1.2.x, 1.4.x, 2.0.x, 2.2.x
And there are development releases that have an odd number in the minor
version:
eg. 1.3.x, 2.1.x etc.
What your engineer may be thinking is that since RH 6.1 has an odd number
as the minor version, that this is an unstable release. This is not the
case. This versioning standard only applies to the kernel, and not the
distribution.
RH6.1 comes with kernel 2.2.10 or 11 I think, so it is a stable kernel.

Well, for one, it has a newer kernel. There have been several security
holes fixed. There is a better GUI. I am not sure if 5.0 has GNOME, but
6.0 and up has GNOME.

If you really want to check out the differences, you should look at the
Changes file. You will find it in the source directory, most likely
/usr/src/linux/Documentation/Changes
You will also find a lot of other docs in this directory, that you should
read at some time, if you want to get acquainted with your system.
