Agree you can learn a lot about Linux admin on your home PC.  To enhance
this learning you can (if budget allows) buy a cheap older PC(s) and
other hardware for networking and sw raid configs as well and keep
detailed logs of your activity so you can always go back and trace what
works and avoid what does not.   

As for getting a job on a live prod server - be honest and ask yourself
to be supervised by a senior admin otherwise you are asking for trouble.

AIX/HP-UX desktops used to be available on their respective hardware
platforms.  You may have better luck searching for them in the US
markets.
