To each his own really. I started with Debian (that too woody, not
sarge) and I felt that provided you read the manual and are ready to
*read* the instructions while installing, there is no end to how much
you can learn only in your first install itself. I call it the bottom
up approach; learn the basics (basic configuration, CLUE, etc) and
then try to build a GUI distro out of it.

Then again, I guess to each his own.
