I happen to still use sendmail. I have long ago paid my dues
with sendmail.cf; and given that sendmail.cf is a Turing complete
language, there are things possible in it that are not possible for
things like postfix. And the restructuring of sendmail has improved it
security stance a lot; and there are a whole lot of eyes looking at
 sendmail installations around the world.

Having said that, if you are new to MTA's, and have not yet
mastered the arcanities of sendmail.cf, stick to postfix. It is simpler
to operate, and most people never need the ability to write a fast
 fourier transform in sendmail.cfr ;)
