Why do you want every mail, should go to system-admin account? I can't think of any reason to do same in any sort of circumstances, anyway choice is your because you are the admen of the server.
I believe you first read the virtual hosting concept in sendmail. http://www.sendmail.org/tips/virtual-hosting.php Then you read the same virtual hosting concept, in Postfix.
