ARP Spoofing is one of the options

Incase, you are administrator then you might have
access to Gateway machine. Sniff the packets on
Gateway. There are many Messenger sniffers those can
parse the captured packets to show you chat logs in
text file.

If you are using some appliance like Cisco Pix,
Sonicwall etc as Firewall. Then deploy a hub at
firewall and install a sniffer machine to sniff the
packets and then use messenger sniffer/decoder. Its
just like Tapping mode.

You may write your own Perl parser to fetch the chat
messages out of captured data.

Remove messenger access in firewall for all the users
on LAN and deploy your own Jabber Chat Server with
Plugins for MSN, yahoo, gtalk, IRC, etc. and all the
logs will be saved in Mysql Database.
