Alternative install will get you there also you may want took look at Xbuntu it
uses xfce as GUI and that is much smaller than Gnome.

Subject: [lug:13968] Ubuntu without GUI?
To: Linux Users Group <[email protected]>Reply-To:

Hello everybody out there using Linux ;-),

I am using Ubuntu 8.10 with a GNOME Desktop. I want to get more disk space and
am able to forswear the Graphical Desktopenvironment. I just want to get a
Shell after boot, that's what I mean. Is it possible to remove GNOME and all
the graphical stuff? If it is, please answer. It would be great if somebody
could help me.
..and sorry for my bad english, but I'm a 14-year-old german...
