Go to http://www.gentoo.org/doc/en/list.xml. I think Gentoo is the best when it comes to the documentation. They even have a proper manual for installing Gentoo with SELinux! Also go to http://gentoo-wiki.com. Awesome site. Great articles. I think these two links are quite enough to teach you Gentoo inside out. Not to mention, the #gentoo channel on irc.freenode.net is great too. There are some very good people around who can help you. Good luck with Gentoo. And I 100% agree with you when you say that you'll start loving Gentoo once you know what's happening. Seriously!
