SCSI would be a costlier bet, but if you don't mind the budget go for it, but what I think Mail Server would be used much for spooling the data and will not need much faster I/O interaction, atleast that is not primary , a major consideration is a storage capacity at a reasonable cost SATA would be a decent bargain for your need.
