If u r thinking of Gatway-Router with linuxbox. The network set up looks ok. 
what is missing is,
1. you need say kernel to exchange packets between NIC's eth0 & eth1. 
    Make IP-Forwarding ON.
2. to see the Internet behaind the router by the Win-box you need to SNAT the 
using iptables nat table. further you can use iptable FORWORD chain from ilter 
table.
 
I am little confused.... u said u have Win-Servers. Then if u want the Internet 
see your Win-box behaind the Linux-router box. Then you need go for DNAT the 
required ports from that Win-Box....
 
I stronly suggest u use 3 NIC if  u go for DNAT & SNAT.
Do not disclose your end network IP's
 
Further i suggest you check the CISCO product Linksys. which is cost effective 
solution.

open source has answers
may be the best, may be the worst.
But it is pain full.

I'm on my way to make my linux PC (with 2 NICs) be a router/gateway for my LANs

eth1 - connected to a switch (that connects with 5 windows servers) - IP:

Here is my setup for 1 windows server: IP = 192.168.1.2 Gateway = **192.168.1. 
1**, sub = **255.255.255. 0**.

I was able to ping from windows to linux and vice versa. But, I could not get 
to the internet from windows server. 
I believe that I have to set sth with IPTABLES, is this correct?

And, is it possible to create a linux router/gateway such that I can allow 
traffic like HTTP, MySQL, FTP , email to my 2 windows servers??
