65?  That's a lot of sites on one box  :-)

I believe that IIS runs in the system context - perhaps change the
service to run as an account with permission to the share?  (I'm
assuming that by "IIS User" you mean the iusr* account, which isn't the
account that the service runs as, and probably isn't the user than NT
sees when performing tasks like logging)

UNC paths...have you tried that?  Mapped drives are available when you
are
logged in...not as a running process.

Has anyone out there ever set IIS 4 to write its log files to a
mapped/shared drive. Any tips, tricks, or snafu's you could share would
be greatly appreciated.
When I set it up I get "IIS Logging was unable to create the directory
H:\W3SVC65.  The data is the error." I have set set permissions for the
Admin user and the IIS user to have full control of that mapped drive.
