I have setup many of these...works very well

I am starting to setup mamboserver.com with the phpShop add-in.  Been very
stable.

I set someone up on http://oscommerce.com/ very quickly. It's open 
source, free and has all the things you asked for, but it's in PHP. As 
long as you don't need to tie it to an existing CF app, you shouldn't 
have any problems with it.
