Dave, what version of CF are you using. I believe you could do this with CF 5 using the connectionstring variable of cfquery. As of CFMX, that's no longer possible.
If you're using CF 5 and windows, you can set up a DSN through the datasource wizard. This will allow you to automatically generate your schema.ini. Just choose File DSN -> Microsoft Text driver->Select your directory->Click on file->Define Columns The connectstring will be the resulting file created from the wizard.
