Its mobile armor mode's purpose is the same as any other: To increase speed. Its easier to launch mobile suits in MA Form from a base and then have them transform when in combat to MS Form than to have a ship go all the way into the battle and risk being attacked.
The MA Form of the normal Gaplant is one of the fastest MA's of its time. I'm sure the TR-5 is no different.
