I dont have any specific experience with Checkpoint site to site VPN but have used PFsense on a lot of other devices.
What I do is setup remote access to other device first and using 2 monitors have the config pages of both endpoints up. Simply go through ensuring the details are correct at both sides and check the logs. Setting up IPsec VPNs is quite easy. Any problems look in the logs to get a hint where the problem may be.
