As far as I know, in the case of BitTorrent, not really. BitTorrent uses unpredictable source and destination ports, so all you can do is confine it to a single IP on your side, and route all traffic from that IP through the VPN.
I don't know of a way to do this using layer7 filtering, at least at this time, but someone else might chime in with a suggestion.
