I can't tell, what is recommended, I just can say I do only set up one
group and it works as well.

In my understanding you need to set up a default gateway per WAN. But to
be honest, I haven't tried otherwise.

Not that I am aware of. But your best bet is to try things out. And btw:
Remember to set up Firewall Rules for your gateway group(s).
